Abstract
This Minor thesis is research about Design of Banana powder
Manufacturing process. The choosen banana type is cultivated banana cause of widespreadation of growing and high gap of commercial value increasing (Low capital cost and High sale price). We set cost target to increase commercial value from 12 baht per kilogram of raw fruit bananas to be 800 baht per kilogram of transformed product as Powder banana. This research is include Powder banana production designing platform which production capacity is 80 clusters per one day and detail of Slice machine, Hot air oven and grinder machine which cost is lower than market price. We researched any information of Cultivated banana raw fruit characteristic, raw fruit powder transformation process, Farm Environment detail. Then, we planed and designed for transformation process and machine 3 parts as below. Slice machine (Self-producing) Production capacity is 117 kilogram per hour, Hot air oven (Self-producing) Production capacity is 80 Kilogram per 1 time and oven at 70 celsius by 7 hour. Grinder machine (Outsource-supply) Production capacity is 61.6 kilogram per hour. At the last, This Powder banana transformation process can transform raw fruit banana 80 clusters, around 80 kilogram, to be powder 27 kilogram. Results from this research can design banana powder production process and powder banana have the desired quality.
